Growing up, my family didn’t have appetizer foods very often. Being a small family of 3, it didn’t make much sense to have so much food for so little people and during special treats of eating out, they were an unneeded extra expense. So, in my adult years I have been intrigued by a variety of appetizer recipes. The boyfriend mentioned recently that he’d really love some Chex Mix or Moose Munch (a popular snack from Harry & David) and being in the mood for a sweet and salty snack, I started researching recipes for Moose Munch.
However, at the time I didn’t really feel like taking the time to pop some popcorn on the stove (we shockingly don’t have a microwave) and then having to go through it for all the unpopped kernals, etc. So, I had the bright idea to mesh the two ideas together and put together a recipe for Caramel Chex Mix. Ah, the sometimes great ideas that come about from laziness. 😉
This recipe is really versatile and totally adaptable to your tastes. Just try to keep the measurements the same so you have enough caramel to coat everything in a happy sweet marriage. Use any type of cereal you like, add seeds or different types of nuts, various candies, whatever you like.
It was so not easy to wait for it all to cool to dig into!
The first time around I went with Chex cereal, roasted peanuts, pretzel sticks, Heath bar pieces, and chocolate chips with a drizzle of chocolate – did I mention my sweet tooth was talking to me the day I came up with this? It was so super delicious that I will make it this way again and again, but maybe also try different candies and maybe some sunflower seeds. It wasn’t too sweet, though, and the boyfriend that isn’t overly a fan of sweets loved this mix a lot. I won’t even begin to admit how quickly we ate it. 😉 I just may even get around to trying it with popcorn one day…maybe. Also, there’s often a Chex cereal coupon over at Coupons.com. These have been going on sale for $2 each at my local store and with the coupon, it makes for a really great deal!
